All but the three classic crepes are gone.

Beurre sucre. Zeste de citron. La nutella.

That’s all that remains of the old guard. But even these didn’t remained unscathed. The problem with changing a classic is that people already love what it stands for. The moment you change one, you risk losing the very thing they came for in the first place.

Beurre sucre – butter & sugar.
Zeste de citron – lemon & sugar.
La nutella – yes.

Simple and really not much to hide behind. So instead of trying to reinvent the classics, we chose to go deeper in the flavours that everyone already loves. And the essence stays the same – that’s a must. We took the individual ingredients and made them more deliberate, more intense.

For example, on the Beurre sucre, the butter is browned and the sugar is caramelised. And the change is like night and day. Deeper aroma. Richer flavour. Crispier texture. And honestly, we didn’t actually change much, we just pulled the right levers.

And finally we added an ice-cold brown sugar mascarpone whipped cream quenelle. We don’t need it but… pourquoi pas?
